Once the water is off, open the lowest tap in the house to drain what is still in the pipes — that stops the remaining head of water finding its way into a wall cavity while you wait.
Stop using every fixture on that line, including washing machines and dishwashers. Each extra litre has to go somewhere, and with a blockage downstream it comes up at the lowest opening — usually a shower base or an overflow gully outside. Lifting the gully grate in the yard is worth doing: if it is running clear, the blockage is inside.
If the unit is leaking rather than simply cold, close the isolating valve on the cold inlet at the top of the tank. Electric units also have their own circuit at the switchboard, and switching it off stops an element firing into an emptying tank. A small drip from the relief valve is normal; a steady run is not.
